We then add onions, celery, carrots, a splash of wine, and speck rind for flavour before melding with tomato passata for another three long hours on a lazy simmer. The result is a super-tasty yet delicate and velvety bolognese that clings beautifully to pasta and melts luxuriously over polenta. Kids love it!
To reheat simply defrost fully in the fridge or microwave and then re-heat gently until piping hot.
Serving suggestion: Serve with pasta or polenta or zoodles, loads of parmesan cheese and a crisp green salad (all not included).
